Tuna & Artichoke Melt

Cook Time : 2-3 minutes
Yield : 1 serving 

Ingredients

6 oz tuna packed in water (drained)

2 pieces canned artichoke hearts (cut up in desired pieces)

4 tsp lemon juice

2 tsp olive oil

1 whole-wheat English muffin

2 Tbs grated Parmesan cheese

2 Tbs shredded mozzarella cheese (part-skim milk)

Directions:

Preheat broiler.

Combine:

  • tuna

  • artichoke hearts

  • lemon juice

  • oil

Mound mixture on the English muffin on the two halves​

Top with cheeses.

Place under broiler on a cooking sheet for a few minutes until browned.

637 calories

 

My notes:  

I am not a huge fan of tuna melts but this one was really good.  I added a little onion and garlic and was full when I ate both halves.
