Slow Cooker Shredded Taco Chicken*

Prep Time : 5 minutes
Cook Time : aprox 3-10 hours depending on what your plans are.  
Yield : About 4-6 servings

 

Ingredients:

6 medium boneless skinless chicken breasts

1 Tbsp chili powder

1 tsp cumin

1 tsp seasoning salt

1 tsp black pepper

1 tsp white pepper

1/2 tsp paprika

1/2 tsp chipotle

1/4 tsp red pepper flakes

1/4 tsp oregano

1 c chicken broth

 

Directions:

Put all ingredients into the slow cooker. Cook on high for 3 hours or low for 6 hours.

Using a fork, shred chicken.

Serve.

 

Nutrition:

Approx. 214 calories per serving.

 

My notes:  

I have a 3 crock pot set up and I make this for gatherings with the Pork Carnitas and the Shredded Mexican Beef recipes for a taco and burrito night.

 

Leftovers are great for quesadillas, enchiladas, etc.  The leftovers can also be frozen and reheated for another time.
