My Beef Roast - Crock Pot

Prep Time : 5-10 minutes
Cook Time : 6-10 hours depending on your day
Yield : 8-10 servings
Ingredients:
4-6 pounds boneless beef meat (sirloin boneless chuck, brisket, top round, or rump) - frozen or thawed
2-3 large onion, quartered (separate quarter into 2-3 layers of onion)
4 to 5 carrots, peeled and sliced into 1-inch chunks (or about a pound of whole baby carrots)
1/4 cup cold water
1 package dry, onion soup mix
3-6 garlic cloves, minced
1/2 tablespoon steak seasoning of your choice (or just salt and pepper to taste)
4 dried bay leaves
any combination or all of the following (if using all cut to about 1/2 tablespoon each):
1 tablespoon dried thyme
1 tablespoon dried rosemary
1 tablespoon dried sage
1 tablespoon dried parsley
1 large can of mushroom soup (for gravy on top of the roast or over mashed potatoes)
Directions:
Put the beef in the crock pot (fat side up if possible)
Surround the roast with the carrots and onions.
Pour the water over the beef.
Top everything with the onion soup mix, garlic, steak seasoning, thyme, rosemary, sage, parsley, bay leaves (or combination of any).
Let cook on low heat approximately 8-10 hours or high heat for 4 to 5 hours until the meat and vegetables are tender.
When ready to serve, remove and discard the bay leaves.
The beef can be served in slices, chunks, or shredded.
Gravy:
Remove all but about 1/4 cup of the liquid from the crock pot.
Heat the mushroom soup adding the liquid until desired consistency of the gravy.

My notes:
I have been making this roast for more than 20 years and it is one of my favorites. I start with a frozen roast by prepping everything the night before in the crock pot and putting it in the refrigerator over night.
I have been experimenting with this over the years and because I don't really measure anything that goes into it, it always tastes just a little different each time. With that said, play around with it and make it your own. And, yes, I cheat and make the gravy using a soup base but that is because I can't seem to make good gravy from scratch to save my life!
