Cioppino*

Ingredients:

3/4 cup butter

2 1/2 onions chopped

2 1/2 cloves garlic chopped

1 1/4 bunch fresh parsley chopped

2 1/2 cans stewed tomatoes

2 1/2 cans chicken broth

2 bay leaves

1 Tbls. dried basil

1/2 tsp. dried oregano

1 1/4 cup water

1 3/4 cup white wine

1/2 large bag of frozen seafood mix

Directions: 

Over medium-low heat melt butter in a large stock pot

Add:

  • onions

  • garlic

  • parsley

Cook slowly until onions are soft, stirring often

Add everything except the seafood mix.

Mix well, cover and simmer 30 minutes.

Stir in seafood mix and bring to boil.

Lower heat and simmer 5-7 minutes.

Serve

My notes:  

This recipe is a variation of the one I found on line and was made on a large scale to freeze additional servings for another day.
