Beer Braised Beef - Crock Pot

Prep Time : 15 minutes 
Cook Time : 8 or more hours depending on your schedule
Yield : 8-10 servings (recipe was doubled to make leftovers/freeze and eat later)

Ingredients:

4 pounds top round (or boneless chuck)

4 cups chopped onion

4 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, undrained

2 cans beer (whatever you have on hand or want)

8 Tbs. molasses

Cooking spray

Directions:

Spray the inside of the crock pot with cooking spray

Place the onions in the bottom of the crock pot

Brown roast on medium-high heat (3 minutes on all sides)

Place meat over the onion

Pour tomatoes and beer over all

Cook on low for 8 or more hours.

Shred beef with 2 forks and stir in molasses and cook for an additional 10 minutes.

Service over mashed potatoes.

Nutrition:

Around 265 calories (1 cup serving) without the potatoes.

My notes:  

We had some "crappy" beer left over from a gathering we had and I wanted to do something with it and found this.  It was amazing to say the least.  We served with a side salad to add greens.
