Apricot-Ginger Chicken with Green Beans - Crock Pot

Prep Time : 5-10 minutes
Cook Time : 3-10 hours depending on your day (the longer you cook though the more cooked your green beans will be).
Yield : 3 Servings 

 

This can be made right away or made a freezer meal by placing all ingredients in a gallon freezer bag.  Take the bag out the night before you plan on cooking it (however, this isn't required and can be placed in the crock pot that morning).

Ingredients:

1 pound boneless, skinless chicken thighs (I use chicken breasts)
2/3 cup apricot jam
1 tablespoon low sodium soy sauce
1-inch fresh ginger root, peeled and grated (I use the ginger in a jar/tube)
3 cloves garlic, peeled and minced
1 pound fresh green beans, cut into 1” pieces (I found leaving them whole makes it easier to remove them.  See my notes for more information)

 

Directions:

Place all ingredients into the crock pot and cook for 3-10 hours.

I couldn't find the nutrition on this one sorry.

 

My notes:  

I wouldn't say this is the best recipe but it is a good one.  The chicken can be served in chunks but to hold more flavor I remove the green beans from the crock pot and shred the chicken to capture the juices better.  Also, I discovered using pre-frozen green beans was disgusting and fresh should be used always!
