White Bean Chicken Chili

Prep Time : 5-10 minutes
Cook Time : 20 minutes
Yield : 6-8 Servings 

Ingredients:

48 oz. Jar Great Northern Beans already cooked or three 15 oz. cans of white beans already cooked

4 boneless/skinless chicken breasts

16 oz. jar of salsa

16 oz. shredded Monterey Jack cheese

8 oz. Jalapeno Jack (pepper Jack) cheese

1-2 small cans green chilies

Directions:

Boil enough water to cover the chicken breasts by at least 2 inches

Place chicken in the water and boil until completely cooked

Drain the water and shred chicken with a fork

Add other ingredients and cook over low-medium heat until the cheese is melted.

Serve.

 

Nutrition:

524 calories each serving (I added up the calories in this for each item for 6 servings).

 

My notes:  

Another not so calorie-friendly but it is such a wonderful comfort food!  This is also great for camping.  I made a huge batch, froze it, and brought it in the ice chest and on the second night we cooked it over the fire.
