Split Pea Soup

Prep Time : 10 minutes
Cook Time : 1-2 hours  
Yield : 8

 

Ingredients:

1 1/2 cup dried peas

7 strips bacon (finely chop 6 - reserving 1)

1 carrot thinly sliced

7 1/2 cup chicken stock

salt & pepper to taste

2 Tbs. butter

1 medium onion finely chopped

1 stalk of celery

1/4 cup heavy cream

Directions: 

Bring pot of water to boil

Add dried peas, cover and remove from heat

Melt butter over medium heat

Add:

  • bacon

  • onion

  • carrot

Saute 10 minutes until soft and starting to brown

Drain peas

Add peas and chicken stock bring to a boil

Simmer gently for 1-2 hours

Uncover and remove from heat

Let it cool

Add to a blender or food processor

Add the cream and reheat.

Serve with crumbled left-over bacon piece

My notes:  

This recipe is from a friend's husband and OMG soooooo delicious!  It doesn't look so pretty as the color is a little odd but don't let that dissuade you.
