Scallion-Ginger Chicken

Prep Time : 5-10 minutes
Cook Time : 15-20 minutes
Yield : 2-4 Servings
Ingredients:
2 tsp. canola oil (we use olive oil)
2 boneless, skinless chicken breasts
6 scallions, thinly sliced (green and white parts - keep separate)
2 tsp. grated fresh ginger (we use the ginger in a tube or jar for ease of use)
1/4 cup mirin (Japanese seasoning wine) or chicken broth
1 Tbs. hoisin sauce or low-sodium soy sauce
Frozen, stir-fry vegetables (as many as you like)
1-8oz package Soba noodles (or any Asian style noodles will do)
Peanut sauce and rice vinegar
Directions:
Make noodles according to package.
Heat oil in a pan over medium-high heat.
Season chicken with salt and pepper.
Brown chicken on both sides (about 3 minutes)
Add scallion white parts and ginger
Cook for 1 minute, stirring.
Add stir-fry veggies, mirin or broth and hoisin or soy sauce.
Bring to a simmer and cook until chicken is cooked through and veggies are to your liking.
Remove pan from heat.
Stir in scallion greens
Splash with peanut sauce and rice vinegar to taste.
Put over noodles are combine all together and serve.

My notes:
Very easy and tasty recipe. I add extra peanut sauce but that does tend to make it a little more spicy but good!
