Pulled Rotisserie Chicken

Cook Time : 15 minutes
Yield : 4 Servings 

Ingredients:

1 shredded rotisserie chicken, (skin and bones removed)

2 tsp oil

1/2 cup finely chopped onion

2 Tbs. brown sugar

1 tsp chili powder

1/2 tsp dry mustard

1/4 tsp all spice - or if you are like me you don't have this on hand

- (makes 1 Tbs) 

  • ½ tsp cinnamon (I omit this due to an allergy in the house)

  • ½ tsp cloves

  • ½ tsp nutmeg

1/8 tsp ground red pepper

2 Tbs. cider vinegar

1 Tbs molasses

Directions:

Heat a pot on medium heat adding oil and onion

Cook for 5 minutes stirring often

Stir in:

  • brown sugar

  • chili powder

  • dry mustard

  • all spice (or a 1/4 tsp of made mixture)

  • ground red pepper

Cook for about 30 seconds​

Stir in:

  • ketchup

  • vinegar

  • molasses

Bring to a boil.​

Simmer 10 minutes until slightly thick.

Stir in chicken and serve.

My notes:  

We served this on hamburger buns with pickles and a side salad.
