Green Chilie Cabbage Enchiladas

Yield : 7 Servings

Ingredients:

1 head of cabbage (7 or so leaves)

3 cups shredded chicken (rotisserie chicken is the easiest)

1 cup chicken broth

1 cup sour cream

2 (7 oz. cans) green chilies (14 oz. total)

Handful of fresh cilantro (I used 2 tsp. dried)

salt & pepper to taste

1/2 teaspoon cumin

4 green onions, chopped

2 cup shredded cheese, optional

Directions:

Preheat oven to 350 degrees F

Enchilada Ingredients:

Bring a large pot of salted water to a boil.

 

Peel the cabbage leaves (peel them gently, and try not to tear them). - I put the head in a bowl of hot water until the outer layers were a little soft.  If I couldn't peal them safely I put them back in the water until I could.7

 

Throw the cabbage leaves into the pot of boiling water for a couple of minutes.

Remove and set on a paper towel to dry.

 

While they are drying:  Mix the shredded chicken with:

  • cilantro

  • green onion

  • and 1/2 of the shredded cheese (optional).

  • Seasoned well with salt ad pepper

  • cumin

Sauce:

Add the chicken broth to a saucepan over medium heat.

Bring to a boil, then lower the heat and mix in the sour cream and green chilies.

 

Heat thoroughly but do not boil, stirring often.

Let simmer for just a bit and the sauce should thicken.

 

Season with salt and pepper.

Making the Enchilada:

Take cabbage leaves and divide the chicken mixture inside of them.

Put a tablespoon or so of the sauce in with the chicken mixture, and then roll up.

Place each cabbage roll in the baking dish and top with the rest of the enchilada sauce and shredded cheese.

 

 

Bake at 350° for about 20 to 30 minutes.

My notes:  

I served this with a sauteed veggie mix of broccoli and orange bell peppers with garlic.

This was SO good!  I was a little hesitant with the cabbage but OMG, so tasty!  We will be having this again soon and this time I am going to add some Cholula Green sauce to it to add a little kick.
