Cheese Egg Casserole

Prep Time : 10 minutes
Cook Time : 1 hour  
Yield : 15 servings

 

Ingredients:

1 cup margarine (1/2 pound)

1 cup flour

2 tsp baking powder

2 pounds cottage cheese

1 pound Monterrey jack (can substitute part with pepper jack)

12 eggs

Combination of any of the following to taste:

Chopped green chilies/jalapenos

Green or black olives

Mushrooms

Marinated artichoke hearts

Onion

Garlic

Ham

Bacon

Salt/Pepper

Directions:

Preheat oven to 350

Melt margarine

Add flour and baking powder

Mix eggs in a separate bowl

Add remaining ingredients

Pour into a 9x13 inch baking dish

Bake at 350 in the oven for 1 hour

Nutrition:

No idea but a sane person knows this can't be low calorie lol

 

My notes:  

This says it severs 15...I'm sure that was the real serving size but I can't just have one.  This was a recipe my Grandmother would always make when we had brunch gatherings. Play around with the additions and cheese, you won't be disappointed.
