Caramelized Carrots*

Cook Time : 15 minutes
Yield : 4 servings

 

Ingredients:

Combine 1 pound baby carrots
1 tablespoon low-sodium soy sauce
2 teaspoons brown sugar
2 teaspoons olive oil
1/4 teaspoon salt, and 1/4 teaspoon black pepper

Directions:

Preheat oven to 475.

Combine all ingredients (I do this in a ziplock bag

Arrange in a single layer on a baking sheet coated with cooking spray; place in oven on rack below pork.

Bake for 15 minutes or until tender, turning once.

My notes:

We make this with our Pork Tenderloin Studded with Rosemary and Garlic as they all cook at the same time.
