when you are too full but crave more
Banana Bread

Prep Time : aprox 10 minutes
Cook Time : 45 minutes
Yield : 1 loaf
Ingredients:
2 eggs
1/3 cup soft shortening
2 ripe bananas (sliced)
2/3 cup sugar
1 3/4 cup flour
3/4 tsp baking soda
1 1/4 tsp cream of tarter
1/2 tsp salt
Directions:
Preheat oven at 350
Grease 8x4 inch loaf pan
Combine in a blender:

eggs
-
shortening
-
bananas
-
sugar
Sift in a bowl (I use a small strainer):
-
sugar
-
flour
-
baking soda
-
cream of tartar
-
salt
Combine egg mixture my hand
Pour in loaf pan
Bake 45 minutes or until lightly browned.
Chill several hours before slicing.
Nutrition:
One 1/2" thick piece = 1 serving. 40 calories (approximate)
My Notes:
This is the best banana bread I have ever had and I HATE bananas. My mother made this while I was growing up. To make it more decadent and beyond tasty, I add a thin layer of cream cheese.
