Balsamic Vinaigrette*

Yield : 1 cup (serving size 2 Tbls.

 

Ingredients:

1/2 cup extra-virgin olive oil

1/2 cup balsamic vinegar

1/4 cup chopped shallot (or green onion)

1 tablespoon Dijon mustard

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon freshly ground pepper

 

Directions:

Place oil, vinegar, shallot, mustard, Italian seasoning, salt and pepper in a blender or food processor and puree until smooth. Or blend in a large glass measuring cup or wide jar with an immersion blender.  Or, if you are like me and don't want the extra dishes and hassle, put in a container with a lid and shake vigorously.
